Eating in season is also beneficial for our environment. When we eat locally grown produce that is in season, we support our local farmers, reduce the carbon footprint of transporting produce long distances, and help preserve the natural resources needed for farming.
In Ayurveda, the traditional Indian system of medicine, eating seasonal fruits and vegetables is an important aspect of maintaining health and balance in the body. Ayurveda recognizes that the natural cycles of the seasons affect our bodies and that each season requires different types of foods to maintain our health and wellbeing. During the hot summer months, cooling fruits and vegetables like watermelon, cucumber, and coconut are recommended to balance the heat in the body. ]]>How long did it take for you to come up with the recipe?
I worked a year on this recipe! I tried so many versions with different shapes, flours, and ingredients... and failed so many times. Working with grain-free flours is very difficult.
How did you improve your health issues?
I found an amazing functional medicine practitioner that helped me through supplementation and food and lifestyle changes to support my body. Making sure I was getting proper sunlight, meditation/breath work, gratitude, and keeping stressors to a minimum (as much as possible) were huge for me!
What are some tips for going gluten and/or grain free?
Start by focusing on what you can eat and not what you can’t eat. There are so many good GF choices that are clean and delicious. When looking at gluten free food products, always check out the back label rather than just buying it because it says gluten free on the front. Ingredients are most important!
How do you balance being a mom and owning a business?
Balance... I’m not too sure that is always possible, haha! But I do my best to keep my boundaries and try to separate out spending quality time with my toddler and working. Also, I am extremely grateful that I can bring Liam to work, another perk to owning the company. When customers come in, they can enjoy seeing a true family business!
Do you feed the bread to your child?
Liam loves AWG Bread! I make him toast all the time, and he especially loves grilled cheese.
Do you eat your bread everyday?
YES! Multiple times a day, sometimes two….I’m obsessed!
What’s your favorite flavor of AWG Bread?
This changes for me week by week, really! I love all of the flavors but at the moment it is the Everything flavor. The subtle taste of garlic and onion is so delicious!
What’s your favorite way to eat AWG Bread?
Loading my toast up in the morning with raw butter, cheese, fried egg, avocado, microgreens, and Redmond's Sea Salt is just one of my favorite ways!

Modern Wheat
First, it is important to understand how wheat, which contains gluten, has changed over the past 50 years and when this "change" started is when people began to be diagnosed with gluten sensitivities, initially Celiac. In order to create a higher yielding crop, the gluten protein in wheat was increased. As a result, many people are not able to digest this larger amount because for thousands of years our bodies were used to natural wheat. (Please click here to read more about Modern Wheat). From this shift in production, Celiac and gluten intolerance were created.
Reaction to Gluten
Celiac disease is a genetic autoimmune disorder that affects about 1 in 100 people worldwide. Those who live with Celiac are genetically predisposed to gluten intolerance, where even ingesting a minuscule amount could lead to severe damage of the small intestine.
Non-Celiac gluten intolerance can be tough to diagnose as it’s not an autoimmune disease or a food allergy (although it is possible to be allergic to wheat). Those living with this kind of intolerance mean that your digestive system does not function at its best after consuming any form of the gluten protein. Basically, with the gluten protein increasing in wheat and added to so many other products, many people suffer side effects such as inflammation, digestive issues like abdominal pain, diarrhea, gassiness, fatigue, headaches, migraines, depression, anxiety, missed menstrual periods, fertility issues, skin rashes, bone and joint pain… the list goes on.
Understanding What You Are Eating - Read Labels
Gluten Free labels are everywhere and unfortunately people only read these words on a package and think it is healthy because it does not contain gluten. WAIT! So many of the ingredients in gluten free products are not only low quality but can still cause health issues. One of these products is modified wheat starch, which is sprayed with glyphosate and genetically modified to become so highly processed that it barely resembles a food product. Bottom line - understand the ingredients you are eating.

We want you to feel confident about what you eat. Please listen to your body. It is SO incredibly important to own your health. Food is medicine and by eating clean and organic you are feeding your body quality nutrients. Storing
Place bread in an airtight container. We love Stasher bags. Keep bread and loaves in the fridge for 2-3 days and then freeze. We highly suggest slicing before you put in the freezer. Place Rounds and Minis in the freezer upon arrival. All products can be frozen up to 6 months. TIP: cut out the label and place it in the airtight container as a quick way to see the flavor.
Serving
Please toast 1-3 times depending on thickness, the thicker the bread the longer to toast. Slice Minis is half or thirds. Toasting changes the flavor and the texture. TIP: when using frozen bread, just toast an extra minute to defrost.

Honey was first written about in 2100 B.C. The oldest honey archaeologists have found dates back about 5,500 years old and was found in ceramic jars in the country of Georgia. And let's take a moment to think about the first person who discovered honey all those years ago. Bees + hive + stings = OUCH! Thank you for being so brave!
Bees can fly up to 15 miles per day. To make one pound of honey, bees in a colony will visit 2 million flowers. A bee beats its wings 11,400 times per minute. Ready for this, bees never sleep. A typical beehive makes between 30-100 pounds of honey a year.
