Spread vs. Stack? The Great Bagel Debate!

And so the great debate continues… which way do you like a bagel? Are you all about the perfect spread bursting with flavor or do you stack as high as the sky? Well, just to make sure we take care of all our wonderful AWG peeps, we have both thanks to the amazingly talented @krystenskitchen! Oh but wait another important decision… Everyday or Everything? Whichever one you choose, it will be decadent and sure to make you smile. Check out these delicious recipes that we know you and your family will love! 

Ultimate Chopped Spread

Are you ready to take cream cheese to the next level? It is easy and unforgettable when you chop bacon, caramelized onions, cheese, and fresh herbs to make the perfect spread!

Ingredients

  • 1 AWG Everyday or Everything Bagel
  • 2 oz cream cheese, softened (Monty's is a great organic vegan option)
  • 1 slice thick crispy bacon
  • 2 tbsp caramelized onions
  • 2 tbsp shredded sharp cheddar
  • 1 tsp fresh dill, finely chopped
  • 1 tsp fresh chives, finely chopped
  • 1 tsp Everything But The Bagel seasoning

Directions

  1. Slice your bagel and toast 1-3 times.
  2. While the bagel is toasting, place the crispy bacon slice, caramelized onions, shredded cheddar, dill, and chives in a small pile on a cutting board.
  3. Sprinkle the Everything But The Bagel seasoning. 
  4. Using a chef's knife, finely chop and mince the ingredients together. Keep scraping the mixture back to the center and continue chopping until it looks like a savory confetti. 
  5. In a small bowl, combine the softened cream cheese with your finely chopped mixture. Stir with a spatula or spoon until everything is evenly distributed. 
  6. Spread the entire mixture over the two halves of your warm, toasted bagel. Enjoy!

Tips & Tricks For Ultimate Chopped Spread

  • It can be a hassle to caramelize one onion. Try making a larger batch over the weekend to use in recipes all week. In a pinch, very finely diced shallots sautéed in butter for 5-7 minutes will give you a similar sweet and savory flavor.
  • Cook an extra bacon slice with breakfast or use pre-cooked.
  • No Fresh Herbs? You can substitute with ¼ teaspoon of dried dill, but the flavor of fresh herbs is highly recommended for this recipe.

Tot Hash Stack

Oh wow! Seed oil free tater tots turned into a hash brown, YES! Stack it high with an egg, bacon, cheese, and hash brown. Using a waffle maker for the tater tots is genius! Start the day off right! 

Ingredients

  • 1 AWG Everyday or Everything Bagel
  • ¾ cup tater tots (using an organic, seed oil free brand like Roots Farm Fresh is a great choice)
  • 2-3 slices of bacon
  • 1 large egg
  • 1 slice of your favorite cheese 
  • Salt and fresh cracked black pepper to taste

Directions

  1. Plug in your waffle maker to get it hot. Warm a non-stick skillet over medium heat for the bacon and egg.
  2. Place the bacon slices in the skillet and cook, flipping occasionally, until they reach your desired crispiness. Transfer the cooked bacon to a paper towel lined plate, leaving a little bacon grease in the pan for the egg.
  3. Spray a little oil on the waffle maker. Arrange the tater tots (they can be frozen) in a single layer on the hot waffle maker, making a circle roughly the size of your bagel. Close the lid and press down firmly. Cook for 5-7 minutes, or until the tots have fused into a golden-brown, crispy "waffled hash brown paddy."
  4. While the egg and hash brown are cooking, slice and toast your bagel.
  5. Place a greased egg ring in the hot skillet. Scrabble the egg in a bowl and season with salt and pepper. Pour the mixture directly into the ring. Cook until desired firmness. The egg ring will ensure it's the perfect round shape for the bagel.
  6. Stack your creation in this order for maximum flavor and stability...
  • Start with the bottom half of the toasted bagel.
  • Place the hot waffled tater tot hash brown on top.
  • Immediately lay the slice of cheese on the hash brown so it gets melty.
  • Add the crispy bacon.
  • Top with your perfectly round egg.
  • Place the top half of the bagel on, press down gently, and enjoy immediately.

Tips & Tricks For Tot Hash Stack

  • For the best results, don't overcrowd the tater tots. Give them a little space so they can crisp up and fuse together properly. A light spritz of cooking spray on the waffle maker can also help prevent sticking.
  • To ensure your egg doesn't stick to the ring, wipe the inside of it with a little butter or oil before placing it in the pan. This makes for a clean release every time.
  • A dash of your favorite hot sauce on the bagel can take this sandwich to the next level.
  • You can make the waffle tater tot hash brown and cook the bacon ahead of time. Store them in the fridge and simply reheat in a toaster oven or air fryer for a super fast assembly in the morning.
