This recipe is a family favorite for Shawna, @alittlelesstoxic because it's easy, delicious, nourishing, and a holiday tradition. She loves that she can assemble it in just 5 minutes the night before and have it ready to bake in the morning. This is perfect for a large group, or you can make it on the weekend to enjoy throughout your busy week (we call this self-care!). Ingredients
- 1 CinnaSpice Loaf or 10 Blueberry Bagels
- 8–10 large eggs
- 1 teaspoon vanilla extract
- Pinch of sea salt
- ½ teaspoon ground cinnamon
- ¼–½ cup maple syrup
- Splash of milk (Any type will work.)
- 1–1½ cups fresh or frozen berries
- 3–4 tablespoons salted butter, cut into small pieces and divided
- *optional 1/2 cup or so of dark chocolate chips plus some for sprinkling on top.
- For Serving: Powdered sugar
Directions
- Line an 8 × 8-inch casserole dish or rimmed pan with parchment paper or grease it with butter.
- Cut bread into 1-inch cubes. Transfer the cubed bread to the casserole dish.
- Whisk the eggs with the vanilla, salt, cinnamon, maple syrup, and milk (plus chocolate chips if using).
- Pour the egg mixture over the bread. Give it a little stir to combine.
- Top with the fresh or frozen berries (and more choc chips if using), and dot evenly with about 2 tablespoons of butter.
- Cover the dish with a piece of parchment paper and then aluminum foil. Pop in the fridge for at least 30 minutes but preferably overnight.
- When you’re ready to bake, place the covered dish in a preheated 350°F oven and bake for 30 minutes. Remove the cover and bake for 15 minutes, or until the top is toasted and golden brown.
- Remove from the oven and top with the remaining pieces of butter and dust with powdered sugar. Serve warm.
