Our Everyday Rounds are SO incredibly popular! They are the perfect base for pizza, avocado, almond butter, and of course, Egg Salad - YUM! When making this classic recipe, we are egg-static to share this Pro Tip with you, which will make this recipe even easier. Honestly, an Egg Salad Stack is perfect anytime of day! Ingredients
No Peel Eggs - AMAZING Pro-Tip
- 8–10 large eggs
- Non-stick cooking spray or butter (for greasing the pan)
The Creamy Dressing
- 1/2 cup mayonnaise (adjust to your preference for extra creaminess)
- 1 tbsp Dijon or yellow mustard
- 2 tbsp fresh chives, finely chopped
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper
- Optional twist: A pinch of paprika or a dash of hot sauce for a little kick.
Directions
- Preheat your oven to 350°F. Generously grease a loaf pan or an 8x8 oven-safe glass dish with cooking spray or butter.
- Now it is time to create the water bath. Crack the eggs directly into the greased pan, no need to scramble. Place this pan inside a larger baking dish (like a 9x13 cake pan). Pour hot water into the larger dish until it reaches the same level as the eggs in the inner pan. Tip: This gentle heat prevents the eggs from getting rubbery or browning on the edges. - Carefully slide the pans into the oven. Bake uncovered for 25–30 minutes. You’ll know they’re done when the whites are completely set and the yolks are firm.
- Remove the egg pan from the water bath and let it cool completely. Once cool, run a knife around the edges and flip the "egg loaf" onto a cutting board. Chop the eggs into bite-sized cubes.
- In a medium bowl, combine your chopped eggs with the mayo, mustard, salt, pepper, and chives. Fold gently until everything is well-coated.
- Enjoy immediately on our Everyday Rounds or even try our Everything or Rosemary Bread. Minis would also be fantastic!
- Egg salad can be stored in fridge 3-5 days. Enjoy!
